材料:
黑枣酒1/3瓶、童子鸡1只、干龙眼10个、八角1粒、老姜4片、红辣椒1只、冰糖20克、春葱2棵、蒜头粒6粒、栗子10粒。
调味料:
生抽2汤匙、盐1/2茶匙、胡椒粉1/2茶匙、清鸡汤150克、老抽适量。

做法:
1、煮一锅沸水,然后放入洗净的童子鸡煮出血水后捞出洗净再沥干水分。
2、将童子鸡从肚子切开后刷上老抽上色后入油锅炸至金黄色取出,再将蒜头也放入油锅中炸至金黄色。

3、取一个大碗,将炸过的童子鸡以皮朝下放入碗内,然后把其余的材料及调味料放入鸡内。
4、用保鲜膜将大碗封口,然后入蒸锅蒸一个小时后取出,先倒出汤汁,再去掉配材杂质,栗子分开放。

Chicken Stew with Hei Zao Jiu
Ingredients:
Hei Zao Jiu-1/3 bottle,Spring chicken-1 whole,Dried longan-10 pcs,Star anise-1 pc,Ginger- 4 slices,Red Chilli-1 pc,Rock Sugar-20 g,Spring Onion-2 stalks,Garlic-6 pcs,Chestnut-10 pcs.
Seasoning:
Light Soy sauce-2 tbsp,Salt-1/2 tsp,White Pepper Powder-1/2 tsp,Chicken stock-150 g.
Method:
1、Boil water and cook the chicken quickly,discard the water.Rinse the chicken
well.
2、Rub the chicken with dark soy sauce and deep fried till golden colour and set
aside.Deep fried the garlic till golden colour,set aside.
3、Place the chicken in a deep bowl with the skin facing downward,Add in the
remaining ingredients and seasonings.
4、Cover the bowl and steam for 1 hour,drain out the stock before discarding the
condiments.Retain the chestnut and chicken.
5、Place the chicken in a dish with skin facing upward,chestnut place chestnut by
the side.
6、Boil the stock,test the taste before thickening it and drizzle over the
chicken.Serve hot.

小贴士:
1、黑枣酒也可以用绍兴酒、白米酒代替。
2、栗子可用干栗子,但是在使用前先用热水浸透再使用。
